This is by far one of my FAVORITE Clean eating recipes and my family loves it too. We eat this about once a week. It is so easy to make at the last minute and I keep the ingredients (all six) on hand all the time. It is clean, healthy and 21 Day Fix approved. It can go in the crock pot for a few hours but I usually throw mine in the electric pressure cooker and its done in 16 minutes.
Chicken Burrito Bowl
1lb Chicken (cooked and cubed or shredded)
3 cups chicken broth
1 pack low sodium taco seasoning (make your own if possible)
1 15oz can diced tomatoes, drained (with onions and chilies is good too)
1 14oz can black beans, rinsed & drained
2 3/4 cups instant brown rice
1/2 cup Colby jack or taco blend cheese, for topping (optional)
Cook everything except the rice in the crock pot for about 4 hours, then add rice and cook for an additional 30-45 minutes. Top with cheese, sour cream, guacamole and any other fixings that suite your fancy.
NOTE: You can also substitute the chicken for shrimp or ground or shredded beef. If you use beef, be sure to use beef broth instead of chicken.
